Recipes on Repeat

The whole wife thing - grocery shop, clean house, wash/dry/fold laundry, pick up after you-know-who AND fix dinner every night - is in itself a full-time job. And because I already have myself a full-time job, I like to keep things simple. I find amazing recipes online, let's get real - on Pinterest - but they always include a bajillion ingredients/steps and I'm just not up for the challenge.

So here's my solution - crockpot. crockpot. crockpot.

I have 3 crockpot recipes that I make over and over and over again.

Cream Cheese Chicken Chili (I orginially saw this here)

2 frozen chicken breasts
1 can rotel
1 can corn kernels (do not drain)
1 can black beans (drained/rinsed)
1 Ranch packet
1 tablespoon cumin
1 teaspoon chili powder
1 teaspoon onion powder
1 8oz pkg cream cheese

Everything in the crockpot on low for 6-8 hours. (Sometimes it's more like 10, but whatevs)
Shred chicken before serving.
I eat mine over tortilla chips with cheddar cheese and sour cream.
Austin prefers his over rice.
This feeds about 4 people. (Remember, we're only a family of 2 - and LadyBuggs)

Cream Cheese Cream of Mushroom Chicken

2 frozen chicken breasts
1 can cream of mushroom soup
1 8oz pkg cream cheese

Everything in the crockpot on low for 6-8 hours.

My absolute FAVORITE side dish is HEB brand Himalayan Red Rice or HEB brand Brown & Wild Rice - delish.

**Side Note: Notice a trend here?? (Hint: Cream Cheese)**

Chicken Tacos

2 frozen chicken breasts
3 tablespoons lime juice
1 tablespoon chili powder
1 can rotel
1 can corn kernels (drained)

Everything in the crockpot on low for 6-8 hours.
Shred chicken.
Serve in tortillas with cheddar cheese and sour cream.

My other go-to meal minus the crockpot is turkey burgers. My SIL, Lynsey, showed me these.

Turkey Burgers

1(ish) lb ground turkey (this makes 4 patties)
1/4 onion, chopped
1 Ranch packet
Worcestershire sauce

Mix all together.
Form into 4 patties.
George Foreman Grill on medium for about 4 minutes.
Serve with swiss or provolone cheese, avocado, pico de gallo and spicy mustard.
Serve with sweet potato fries.

And that, folks, is the extent of my cooking. Well, besides frozen pizza...
